This sushi omakase restaurant is run by Chef Choi Ju-yong, whose nickname is, “Collector of natural seafood products.“ Based on the skills sharpened in the kitchen under Chef Park Kyung-jae of “Kojima,“ he finds the finest natural ingredients from across the country and produces high-level results by staying faithful to the basics. In particular, the properly aged kohada (gizzard shad) sushi has a large fan base.
