Chef Joseph Lidgerwood of Tasmania discovers Korean culinary practices like soy sauce, vinegar, pickles, lees and sikhye (sweet rice punch), presenting them as creative dishes in each course. The kitchen team is so passionate for exploration that they search for ingredients across Korea every month. Diners can always enjoy a pairing menu with Korean alcoholic beverages, including “Oh My Gat,“ a traditional beverage developed in-house. This restaurant recently moved to a larger space, launching as “EVETT 3.0.“
