The man behind this fine dining experience, Chef Ahn Sung-jae, started his food career in San Francisco and recently expanded his business to Hong Kong after opening in Seoul. The restaurant presents delicate dishes combining elements that cross boundaries, including French plating and Korean fermentation with Asian techniques. The combination of plating and flavors made complete through several stages, such as mincing or drying ingredients and fermenting yeast to bring out the delicate taste, yields a unique culinary experience only available here. It is also the only Michelin 3-star restaurant in Seoul.
