Chef Lee Jun presents “Seoul Cuisine” based on three elements: the humanistic characteristics of the Korean way of life, the experience of ancestors and his personal memories, and the food culture that covers the mountains, sea, and land. The name “Seoul Cuisine” means cuisine resembling Seoul, where tradition, modernity and various cultures mix. The full course meals, presented quarterly, include more than 27 “episodes“ based on themes such as ancient recipes, western art history, terroir, and umami.
