Executive Chef Park Ju-eun presents seasonal Korean dishes in courses. He displays a fresh perspective on many dishes, such as his reinterpretation of Imjasutang, a summer specialty of the Joseon aristocracy, as a sesame soup with dumplings. Sustainability is practiced by using crops cultivated with natural farming methods. There’s great joy in finding the beauty of Korea throughout the space, such as media art based on folk paintings and handicrafts in elegant shapes.
